Sweet Potato Rosti
How to make quick and easy sweet potato rosti, a healthier alternative to the Swiss original
Sweet potato rosti is a healthier alternative to the Swiss original. Baked and not fried, our sweet potato rosti have a lot less oil. They are made with chickpea flour, so they are vegan, tasty and gluten-free. You can enjoy the sweet potato rosti for breakfast or as a quick lunch. Sometimes, we even love to add them to our vegan sliders.
What are sweet potato rosti
Rösti or rööschti is a Swiss dish made from potatoes in the style of fritters. They are usually ate for breakfast but you can find them in restaurants as a side or you may even find them as a complete dish with spinach and egg. Traditionally a Swiss rosti is made with normal potatoes, but we wanted to challenge it and make it into a healthier vegan alternative, by using sweet potato as the main ingredient and baking it instead of frying in oil.
Potato rosti is also a common Hungarian dish usually as a street food snack or available during the Christmas markets.
How to make sweet potato rosti
Our sweet potato rostis are made with coarsely grated potato. We add chickpea flour, a little olive oil, seasoning and we shape them into rounds or patties, around 1-2 cm thick. We then bake them in the oven for around 15-20 minutes.
You can alter the taste of the sweet potato rosti by adding fresh herbs and apple to make it a little more interesting. You can serve it with a sweet chilli jam or vegan sour cream.
If you want to make a large, more filling dish for lunch, you can shape the sweet potato rosti in a large diameter of around 12 cm. Then you can top it up with all sort of goodies like fresh vegetables, pizza toppings and sauces.
If you plan on serving sweet potato rosti as a side dish, you can have vegan sausages, vegan steak or vegan chicken as a main, for example.
