The ingredients I'm using for this salad are so simple and tasty. They work so well together and I will tell you why.
Start by sourcing your juicy nectarines. You can do firm nectarines to make it easier to slice or delicious ripe ones if you want your salad sweeter and juicier.
Arugula is nice and peppery and the right leafy green for this nectarine salad. You can use another type of green leaf as well but we believe arugula tastes best!
You will need something to make the salad crunchy and pine nuts are incredible. We also tried it with walnuts and they also worked very well. We prefer pine nuts but if you have walnuts handy, the nectarine salad will still be a great success.
Finally, you'll need the ingredients for the dressing. Basil vinaigrette is an instant success for this recipe.
Add basil, olive oil, vinegar, a little agave syrup, salt and pepper together and you will have an incredible vinaigrette that will elevate your nectarine salad. The taste will be even more refreshing, bright and perfect.

Our nectarine salad is fresh and tasty, perfect for the summer. It's vegan, healthy, and takes just a few minutes to put together.
Ingredients
- 2 medium nectarines, sliced
- 3 1/2 cups arugula
- 3 tbsp pine nuts
Basil Vinaigrette
- 4 tbsp olive oil
- 2 tbsp vinegar
- 5 leaves basil, finely chopped
- 1 tbsp agave syrup
- sea salt and peppercorn to taste
Instructions
- In a large bowl, place the arugula and the sliced nectarines.
- In a small bowl, place all basil vinaigrette ingredients and mix well.
- Add the basil vinaigrette to the nectarine salad, then top up with the pine nuts.
- Serve immediately and enjoy!
