How to make the best ever vegan banana bread
Here are the ingredients you will need
- 4 medium ripe banana (roughly $1)
- 1/3 cup oat milk ($1.40)
- 1/3 cup vegetable oil (I used olive oil) ($1.14)
- 1/4 cup caster sugar ($0.63)
- 1/2 cup rolled oat ($0.44)
- 1 1/2 cup non-bleached all-purpose flour (I used type 550) ($2.53)
- 2 tbsp, ground flaxseed ($0.09)
- 1/2 tbsp baking soda ($0.04)
- 1/2 tbsp baking powder ($0.04)
- 1 tsp vanilla extract ($0.01)
- 1/4 tsp salt ($0.01)
- 1/4 cup, chopped walnuts (or any other nuts) (optional)
- 1/4 cup dried cranberries(or sultanas, raisins, dried cherries etc) (optional)
Preheat the oven to 350°F (180°C). Lightly oil and dust with flour a loaf pan. Set aside.
Using a food processor, mash the bananas. You can also mash them by hand, but make sure they have no lumps. Add the oat milk, the vegetable oil, the vanilla and the ground flaxseed. Whiz again until everything is fully combined.
In a large bowl add the flour, sugar, oat, baking powder, baking soda and salt. Mix well. Add the banana mixture to the bowl and gently mix with a wooden spoon until everything well combined. Try not to overmix. Once you see no patches of flour you can to mixing.
If using nuts and dried fruit, add to the mixture and gently fold. Transfer the mixture to the loaf pan. Add any desired toppings if using any. I decorated mine with hazelnuts.
Bake in the centre of the oven for 25-30 minutes or until golden brown on the outside. Check the vegan banana bread after 25 minutes to see if it's done. To check if it's ready, you can insert a skewer in the centre of the vegan banana bread. If it comes out clean, the vegan banana bread is ready.
If the banana bread is not yet baked and the 30 minutes have passed, cover the banana bread with aluminium foil so the top doesn't burn, then continue baking for another 5 minutes. Check with the skewer test again.
Leave it to cool in the loaf pan for about 10-15 minutes, then transfer the vegan banana bread on a cooling rack for another 30-60 minutes before slicing with a bread knife.
Enjoy it with vegan butter or on its own.
