Triple Sec Cocktail (Seville Blossom)
This triple sec cocktail is my own invention, after sampling some of the best cocktails in the world in a bar in Athens
I'm proud to present you this special Triple Sec Cocktail, invented in my own kitchen. I decided to name it Seville Blossom as I will explain below why. To understand why this I pick these ingredients and how I came to marry them, we need to go back in time, to September 2019, during our trip to Athens, Greece.
You know that moment when you order a cocktail with the most incredible smell and a taste so good you can't stop thinking about it? It happened to me last year, in Greece. We were on a mission to uncover what Athens has to offer when we decided to visit one of the top cocktail bars in the world: Rum au Baba. If you have a tripped planned to Athens, make note of this bar, it's incredible.
The atmosphere set the tone of our evening. Dark and moody at first glance, decorated with fun wallpapers and old paraphernalia, Rum au Baba captured our imagination in a heartbeat. What could be the story of the bar?
Thanos Prunarus is known as the owner of the Baba Au Rum bar located in the Greek capital. Initially a receptionist in a hotel in London, he decided to start his own bar in his home town, Athens, now classes as one of the best cocktail bars in the world. And he didn't impress just with the interior design of his bar, or the super clever avant-garde style menu, but his unique crafted cocktails too.
One too many cocktails later, I decided to order something called Love of Zero, a beverage inspired by a 1921 film with the same name. It was love at first...smell.
Obsessed with the cocktail, I took a picture of the description and its contents. The ingredients were tricky to the source: tomato water especially was something I never heard of before. The orange flower water was specifically made from oranges from Seville. And then it got to me. That's why I was infatuated with the smell. It reminded me of the time we walked around Seville during the full orange blossom season.
Ask my husband, I couldn't stop talking about this cocktail. I want to go back to Athens just to sit down with this incredible cocktail and savour it for days. But little by little I was determined to source my own ingredients and try to recreate it.. with a twist.
Which brings us to this Triple Sec Cocktail made with fresh tomato water, orange juice from Seville oranges, lemon juice and a vegan version of albumin made with aquafaba.
How to make this Triple Sec Cocktail
To make my own version of Love of Zero, I decided to make it a Triple Sec based cocktail. I love Triple Sec because of its orange flavour which is perfect for this drink. My Triple Sec cocktail is also quite low on alcohol having just one shot of Triple Sec.
You can also use Cointreau if you prefer and happen to have that in your home instead. Add one shot of Triple Sec to a cocktail glass. Add the freshly squeezed lemon juice and orange juice, then add around 3-4 spoonfuls of whipped aquafaba on top. Decorate with a sprig of fresh rosemary and enjoy.
Aquafaba will not have any bean smell or taste.
What you need to know: you can make your own tomato water, I explain below how to make it. I recommend using oranges from Seville if possible. I could not source orange flower water but if you happen to find it, you can add three drops of it over the aquafaba for a more intense citrusy smell.
How to make tomato water?
To make tomato water you will need just a couple of really juicy tomatoes, a cheesecloth and a bit of patience.
Line a large colander with cheesecloth and set it over a bowl. Chop your tomatoes into super small pieces and place them in the cloth-lined colander. Leave them in the fridge overnight. In the morning you will see a tomato concentrate in the bowl which is sweet and delicious. Voila, you now have tomato water.

Description
This Triple Sec Cocktail is one of the most interesting drinks I ever attempted. It's full of colour and with its orange taste and sweet subtle tomato water flavours, this is my best cocktail creations to date. Learn how to make the best Triple Sec Cocktail and serve it during your next dinner party.
Ingredients
- 1 shot (1.5 fl oz) triple sec
- 1 fl oz Tomato Water*
- 1 fl oz lemon juice
- 5 fl oz orange juice
- 3 tbsp aquafaba (whipped)
- 1 sprig rosemary
Instructions
- Start by making the aquafaba. I found that the liquid from a 400g can of chickpeas is enough to make enough whipped aquafaba for 3 of these Triple Sec Cocktails. Add the aquafaba to a bowl and mix it using a handheld mixer or a standing mixer with the whip attachment. Whip for about 6-10 minutes (time varies depending on your machine) until you see firm peaks forming. The consistency should be similar to whipped egg whites.
- In a cocktail glass, add the Triple Sec, the tomato water, fresh lemon juice and fresh orange juice. Add 3-4 spoonfuls of whipped aquafaba. Decorate with a fresh sprig of rosemary and serve immediately.
