Why Rocket and Pear Salad?
It may sound weird, adding fruit to a salad, but pears work especially well with rocket leaves, as they are slightly peppery. The combination is divine, like a match made in heaven.
Rocket leaves (roquette in French) are also known as arugula or garden rocket, is one of the most nutritious green-leaf. It originates from the Mediterranean and it's an edible annual plant. It tastes fresh, a bit tart and bitter and it's defined by a peppery flavour. It's ideal in sandwiches, as a garnish, or as I like to use it, as the base for my pear salad.

Rocket and Pear Salad ingredients
A salad should be nice and simple, with just a few ingredients so it's fast and healthy. For this rocket and pear salad you only need 5 ingredients and just 5 minutes to put together.
Rocket leaves - rocket is the base for my rocket and pear salad. You might find them as arugula in your local supermarket depending on the country you are in
Pear - I use Forelle Pear because it's grim, almost crisp and sweet and tangy flesh. The peel is smooth and thin, make it ideal for salads. It's sweet, a cinnamon-spice flavour which makes it quite unique and wonderful for our fall salad.
Vegan parmesan - Traditionally, a rocket and pear salad have parmesan on it, but since we're keeping things vegan here, we're using the shavings of vegan parmesan. Find your best brand at your local supermarket.
Walnuts - Walnuts are mild, earthy and a little tangy. They are easy to chew which is why they are my nut of choice in salads. Walnuts are packed with health benefits and that's exactly why I like to add them to my salad. Not to mention, they add the right amount of crunch! They are especially great for their iron and magnesium content.
Balsamic Vinegar - Finally, I like to add balsamic vinegar straight as it is. No complicated vinaigrette this time, as it will only distract from the taste of the salad, and not add to it. Use the best brand you can afford and make sure the balsamic is on the thicker side if possible.
You can of course add salt and pepper to your taste to this salad!
How to make the perfect rocket pear salad
First things first, wash and pat dry your rocket leaves. I use a paper towel to gently remove any excess water.
Then it's time to slice the pear. To cut the pair the correct way, you should first place the pear on a cutting board and slice it in half vertically. Remove the calyx at the bottom. Using a sharp knife, remove the stem and any strings. Gently scoop out the core from both halves. Cut into thin slices.
Add your walnuts, the vegan parmesan shavings and drizzle with your balsamic vinegar.
That's it, you are now ready to eat a perfect rocket and pear salad.

- 1 large pear
