You can make your fries the way you want to, and this recipe will tell you how to make them crispy in either the air-fryer or in an oven. We recommend buying real potatoes and making the fries this way but of course, you can buy frozen fries too.

You can make chimichurri with parsley but also with coriander (cilantro) if you prefer. I like both versions and they work so well with fries, it's amazing.
Ok, so you are thinking about dipping your fries into chimichurri? Me too! Chimichurri is a perfect combination of ingredients that makes the sauce tangy, fresh and earthy but also with a hint of spice. Literal perfection. Now add fries to the mix and you have a recipe for success.
Chimichurri Fries
Ok, let's make these chimichurri fries and let me tell you about the ingredients.
You will need large potatoes for your fries. Ideally, you will use an air-fryer to make them but you can also roast the potatoes too. I like to slice the potatoes first. As you can see I leave the potato skin on. Just wash the potatoes really well and slice them using a great sharp knife.
Then cut them into small fries, as thin as you like. The thinner the better in my opinion, but everyone loves fries in different cuts. You do you!
Now add paprika, sea salt and a little olive oil. Use your hands to evenly coat the fries.
Option 1: Air-fry the fries until crispy and nice. For the air-fryer, I recommend a Ninja Foodi. There are several reasons for this. I spent more than a month checking the materials for most air-fryers and I'm happy to tell you that Ninja Foodi is the best when it comes to the non-toxic non-stick coating. They use aluminium with a nonstick ceramic coating that is FDA approved and food safe. This coating is also PTFE free. Very important!!! Not all Ninja Foodi are PTFE free, so make sure to check properly the model you want to buy!
Option 2: Bake the fries in the oven. They will take a little longer and they won't be as crispy but still worth it! They taste fantastic and there's no need to buy a new appliance.
How to make chimichurri fries
They are so easy to make, you won't believe it.
Gather all the chimichurri ingredients and simply blend them in your blender until smooth. Taste and adjust the seasoning as needed. For example, I almost always add a little bit more vinegar and salt for myself, but my husband loves the recipe as I've shared it with you.
Now that your fries are crispy and done, all you need to do is add the chimichurri to the fries. You can add chimichurri to the fries or simply in a small pot so you can dip your fries into the sauce.
Either way, it will taste fantastic! You'll love this super delicious meal!

Ingredients
Fries
- 4 large potatoes
- 1 tbsp paprika
- 1 tsp salt
- 1 tbsp olive oil
Chimichurri
- 1/2 cup olive oil
- 2 tbsp red wine vinegar
- 3/4 cups parsley, chopped
- 3 cloves garlic
- 2 medium chillies, roughly chopped
- 1 tsp oregano
- 1 tsp sea salt
- 1/4 tsp, ground peppercorn
Instructions
- Wash the potatoes in warm water.
- Slice the potatoes, then cut them into thin fries. Cut them as thin as you like your fries.
- Preheat the air fryer to 380°F / 195C. (see notes for oven baking)
- Drizzle the potatoes with 1 tbsp olive oil and sprinkle with sea salt and paprika. Mix with your hands to ensure the fries are evenly covered in oil and salt.
- Place the potatoes in the air fryer basket in a single layer. Air fry for 12 to 15 minutes, flipping halfway, or until crispy.*
- To make the chimichurri, add all ingredients in a blender. Blend until everything is well combined and smooth.
- Serve the fries with chimichurri sauce and enjoy hot!
Notes
*Time can vary widely between air fryers. If your fries aren't crispy at 15 minutes, continue air-frying them until they are.
You can also oven bake your fries. Roast them at 425/220C for 20 to 25 minutes, flipping halfway.
