How to make cauliflower stew
In a medium saucepan, sauté the onion in olive oil for 3-5 minutes. Add the garlic, carrots and peppers, thyme and parsley and continue to cook for another 3-5 minutes.
Add cauliflower, tomato sauce, and water. Add salt and pepper to taste and simmer over low heat, uncovered, for about 15-20 minutes until the cauliflower is tender.

- 1 large head cauliflower
- 1 large onion, chopped
- 2 medium carrot, peeled and sliced
- 1 large bell pepper, roughly chopped
- 3 cloves garlic, finely chopped
- 1 tsp thyme
- 1 tbsp parsley
- 1 can (15 oz) tomato sauce
- 1 tbsp olive oil
- 1 cup water
Instructions
