El Diablo is a popular tequila cocktail known for its vibrant and refreshing flavour. Our version of the El Diablo is a sweet and spicy cocktail that can be made with non-alcoholic tequila flavour spirit as well. It's made with ginger and jalapeno syrups and topped with fizzy ginger beer.
Our recipe for the El Diablo cocktail is unique, vibrant and refreshing and it's the perfect celebration beverage. It has a complex flavour profile thanks to the jalapeno and ginger and as the name suggests it's actually a little spicy.
What is the El Diablo cocktail?
For this cocktail, you will want to make your own syrups. I know it sounds intimidating but it's actually really easy. I have two super quick and easy recipes for making ginger syrup and jalapeno simple syrup. Besides, they last for days in the fridge so you can keep using these syrups when you fancy making more El Diablo cocktails.
For this El Diablo cocktail, you can use either real tequila (we recommend silver tequila) or a non-alcoholic alternative from Mockingbird Spirit. We've actually made this El Diablo into a mocktail so everyone can enjoy the party irrespective of their ages and preferences.
Our El Diablo is fully vegan and gluten-free. It requires just a few ingredients and you can garnish it with a little ginger and lime as well to make it look visually stunning.
Ingredients for El Diablo
You will need a handful of ingredients for making the El Diablo cocktail. As previously mentioned, I do encourage you to make your own syrups but of course, if you need the cocktails done fast, you can always purchase jalapeno and ginger syrups. Here's what you need for this epic cocktail.
- Mockingbird spirit (non-alcoholic mocktail) or tequila (alcoholic cocktail) - I made this cocktail with Mockinbird spirit because I'm trying to steer away from alcoholic beverages. It's so nice to be able to enjoy cocktails without a headache. They are obviously much healthier for you and can be shared with everyone at your party irrespective of their age or diet preference. No more offering diet coke to your underage guests, they can now enjoy complex mocktails with proper non-alcoholic distilled spirits.
- Ginger Syrup - To make the ginger syrup you will need a cup of water, a cup of sugar and fresh ginger. All you need to do is simmer them for 30 minutes and you have an amazing syrup to use for all sorts of drinks, including our El Diablo. Here is the recipe for ginger syrup.
- Jalapeno Syrup - I loooove Jalapenos! But in syrup, they taste even better because the result is a sweet-spicy syrup that works so well with so many drinks. The jalapeno simple syrup requires just three ingredients, water, sugar and one single jalapeno. You'll need to bring the mixture to a boil and let the jalapeno steep in the sugary water for 10 minutes. Here is the recipe for jalapeno simple syrup.
- Lime Juice - Freshly squeezed lime juice. One lime usually yields 30 ml (1oz) lime juice.
- Ginger Beer - I like Fever-Tree Ginger Beer but you can go for your favourite brand. Just make sure it's low in added sugars.
- Fresh ginger and lime to garnish - One slice of fresh ginger and a slice of lime juice to decorate.
How to make
You won't believe how easy it is to make this cocktail. And honestly, it's so delicious, El Diablo is quickly becoming my favourite ever cocktail. Here are our step by step instructions.
Step 1: Add the Mockingbird Spirit or tequila to a shaker filled with ice.
Step 2: Add the ginger and jalapeno syrups.
Step 3: Add the lime juice.
Step 4: Shake well.
Step 5: Strain and pour into a cocktail glass.
Step 6: Top up with ginger beer.
Step 7: Garnish with ginger and lime.
Larger quantities
If you want, you can make a pitcher for the party. A pitcher is usually enough for 8-10 cocktails. Here's how to build an El Diablo pitcher.
You'll need 1 ¼ cups of ginger syrup, 1 ¼ cups of jalapeno syrup, 2 cups of Mockingbird spirit of tequila, 1/2 cups of lime juice and 5 cups of ginger beer.
This should yield around 10 cups (2300 ml) of El Diablo. Yum!

Ingredients
- 2 fl oz Mockingbird Spirit*
- 1 fl oz Ginger Syrup
- 1 fl oz Jalapeno simple syrup
- 1/2 fl oz lime juice
- 5 fl oz ginger beer
- 1 slice of ginger for garnish (optional)
- 1 slice of lime for garnish (optional)
Instructions
- Place the Mockingbird spirit for mocktail or tequila for cocktail, the lime juice, the ginger syrup, the jalapeno syrup in a cocktail shaker filled with ice and shake.
- Strain into a cocktail glass and top up with ginger beer.
- Garnish with a slice of ginger and a slice of lime and enjoy.
Notes
*We encourage you to try the mocktail made with Mockingbird spirit as it really tastes fantastic. It's healthier and very low in calories. If you want an alcoholic version, simply use tequila.
