Looking for the quickest and easiest vegan breakfast? You found it because this banana sushi recipe takes less than 5 minutes to create and it requires just 3 ingredients: crepes, bananas and jam (or chocolate spread if you prefer).
We created this recipe because we wanted to serve a sweet and easy dessert which can be shared and also looks great. But we loved it so much we started adopting it as a breakfast choice for those lazy Sundays when we feel like we deserve some indulgent brunch.
If you want a healthier spin-off, simply use avocado chocolate mousse instead of jam. Bananas are extremely healthy and full of energy and if you make your own vegan crepes, just go easy on the sugar and make sure you use cane sugar if possible.
The idea is to have fun in the kitchen and realise that you can get creative with basic ingredients you already have in the house. Also, we know many people have a preconception that vegan means tasteless and has no fun edge to it. Well, this is why we created Yuzu Bakes! Banana sushi rolls
Ok, seriously, can sushi be sweet? Yes, it can. To create the perfect banana sushi for breakfast or for your party you need just 3 ingredients. To get these, we first wanted to deconstruct the traditional maki and figure out how we can replace it with sweet items and have the same result.
So a maki is composed of 3 basic ingredients: nori sheet, sticky sushi rice and filling (e.g cucumber or avocado).
We went in and replaced them bit by bit to create the sweet version. We saw plenty of banana sushi recipes online where recipe developers basically cut a banana into small pieces and put topping over it like chocolate or sprinkles. While that's a nice idea, we wanted to go the extra mile and create something a little more fun.
So we replaced the nori sheet with thin vegan crepe. This can be store-bought or home-made. The point is to find vegan crepes and you are good to go. They are less than £1 for 6 or 8 so it's a cheap ingredient.
We wanted to replace the rice with jam or spread. This is because rice keeps the maki together. In fact, you can even have it without the nori sheet and it will look just as cute as perfectly made. So we decided to go for a sticky ingredient like jam. This can also be used as glue to stick the pancake to itself and create that perfect roll.
As for the filling, a banana was the best choice because it already had a round shape and made perfect sense for a dessert based sushi.
And here you have it, quick and easy banana sushi rolls. Less than 5 minutes, delicious and super indulgent. Also can be used to surprise your loved one with this fun and simple vegan recipe.

Description
Quick and easy to make vegan banana sushi rolls which are perfect for breakfast or served as an appetizer for a dinner party
Ingredients
- 2 large crepes crepe
- 2 medium banana
- 2 tbsp jam (we used blueberry jam)
Instructions
- On a cutting board lay down your pancake. Add one tablespoon of jam and spread it evenly on one side of the pancake.
- Peel the banana and position it 1/3 of the way up the jammy pancake. Roll the pancake around the banana to make a roughly tight roll. If the end of the pancake doesn't stick well, use a little jam as glue. Cut even slices of banana sushi.
(Optional) Sprinkle dried raspberries or any topping of your choice over the banana sushi.
Serve immediately.
