Quick and easy Vegan spread
A delicious vegan spread ready in less than 10 minutes made with white beans and sundried tomatoes
Who doesn't love a quick and easy vegan spread which is ready in less than 10 minutes? We put together a delicious vegan spread which can be used as a starter for your dinner party or even as a dip alongside some hummus, puff pastry appetizers or vegan breadsticks.
What's so special about this vegan spread? It tastes cheesy and it has a lovely Mediterranean flavour. It's also creamy and buttery thanks to the giant white beans we used for the recipe. We also added sundried tomatoes, a personal favourite because of their slightly sweet and tangy taste.
How to make the perfect vegan spread?
A few things to note about this recipe. We cook our own beans in a pressure cooker but you can also purchase them ready-made in a can. If you don't find giant white beans you can use normal white beans but remember the result of the vegan spread might not be as creamy and buttery.
For the sundried tomatoes, we always buy them in a jar, in olive oil. Instead of using olive oil for our recipe, we use the oil mixture from the tomatoes jar. We find that it adds more flavour to the vegan spread. But don't worry, it will taste just as great with plain olive oil if that's what you prefer.
For decoration, we use pine nuts and parsley but you can, of course, get creative here. You can add freshly cooked white beans to the top of the vegan spread, or just some parsley if you prefer. It's entirely up to you.
How we eat this vegan spread?
This vegan spread is exceptional for morning toast and sandwiches. We sometimes add just half an avocado on top, sprinkle some extra salt and we have a quick and easy breakfast ready.
We use this vegan spread as a dip for pretty much all dinner parties we throw. We love it with Italian grissini or with a nicely cut vegan wrap on the side.

Description
A quick and easy vegan spread made from cooked white beans and sun-dried tomatoes. It's delicious, healthy and works as a vegan spread for all toasts and sandwiches or even as a dip.
Ingredients
Vegan spread
- 3 1/4 cups sundried tomatoes, from a jar (see notes)
- 1/3 cup olive oil (see notes)
- 3/4 cups white beans (gigantes), cooked
- 4 tbsp nutritional yeast
- 1 pinch salt
- 1 pinch peppercorn
Vegan spread decoration (optional)
- 1/4 cup pine nuts
- 1 tbsp parsley
Instructions
- In a food processor, add cooked giant beans, sundried tomatoes, oil, nutritional yeast, salt and pepper. Mix well until the result is a smooth vegan spread.
Taste and add more salt or pepper according to your preference. - Transfer to a bowl and decorate using pine nuts and fresh parsley. Serve immediately.
Alternatively, you can transfer to an airtight container. It will keep in the fridge for 3-4 days.

Notes
1. I bought a 280g jar of sundried tomatoes in oil. When drained, should yield 180 g sundried tomatoes.
2. Instead of using plain olive oil, you can use the oil mixture from your sundried tomato jar. It can add more flavour of your vegan spread.
3. You can replace giant beans with white beans, but note that the result might not be as creamy and buttery.
