A melon cucumber salad is a splendid combination of sweet melon, refreshing English cucumbers, crunchy radishes and peppery arugula. It's topped with micro greens, fresh basil and vegan feta cheese for added tang. You can dress it with a drop of lemon juice, a little olive oil or make a light vinaigrette.
This summery cucumber melon salad is ideal as a side dish if you're planning a BBQ in the sun sunshine. Serve it with corn ribs or with vegan sausages that are sizzling on the grill. Delicious!

Ingredients for melon cucumber salad
The main two ingredients for this salad are melon and cucumbers. But you can play a little with the rest of the ingredients. I'm now a big fan of sweet melon and refreshing cucumber combination. So good!
Melon - Any yellow melon would work for this salad. Cantaloupe is usually sweet and delicious in a salad, but I couldn't find any at my local grocer. So, I got the next best thing: Golden Delicious Melons. One taste and you'll fall in love. Their honey flavoured flesh is perfect for this salad. You can also use honeydew melons.
Cucumber - I recommend English cucumbers because they are crisp and slightly sweeter.
Arugula - I love the taste of arugula, that distinctive spicy kick that works so well in any salad. You can use baby spinach instead if you prefer.
Feta cheese - A must for this salad. Grab any vegan feta cheese and add the feta cheese crumble as a topping. It works so well with cucumber and with yellow melon.
Radish - For extra crunch, add a few sliced radishes to the salad. You can replace it with red pepper if you prefer.
Dressing - A little lemon juice or extra virgin olive oil or the combination of both. You can even add a light vinaigrette to it as well.
Topping - I love fresh basil leaves for this particular recipe and micro greens because they look so pretty. Replace basil with mint if you prefer. You can add toasted nuts if you want more consistency.
Tips for the melon salad
You can make the salad ahead of time but make sure you don't add the dressing before serving.
To make the salad even prettier you can use a melon baller and have melon balls with cucumbers and the rest of the ingredients in a serving bowl. This is made to impress.
This salad is best consumed fresh but you can store it in the fridge for up to 2 days. You want it fresh as otherwise it will become too soggy.

Description
A super quick and easy melon and cucumber salad, ideal for a refreshing lunch during the summer. Sweet, crunchy with a hint of tang thanks to the light vinaigrette.
Ingredients
- 1/2 medium melon, cut into wedges
- 3 wt. oz arugula
- 1/4 cup cucumber, sliced
- 1/4 cup radish, sliced
- 1/4 cup Vegan Feta Cheese, crumb
- 5 leaves basil, chopped
Dressing
- 1/4 cup olive oil
- 2 tbsp lemon juice*
- 1 tbsp maple syrup
- 1/2 tsp salt
Instructions
- In a small bowl, mix all dressing ingredients. Taste and adjust as needed. Add more lemon/lime if you want it tangier or more maple syrup if you want it sweeter.
- Start layering the salad on two plates: arugula, melon, cucumbers, radish. Top it up with feta crumble, fresh basil.
- Add the dressing and serve immediately.
Notes
* Use lime juice instead of lemon juice if you want a more aromatic dressing. I prefer it with lime.
