Citrus Salad Recipe Ingredients
This is an easy refreshing salad with easy to source ingredients. You'll find them all in your local supermarket. For the citrus vinaigrette, we recommend using fresh lemon juice or lime juice with dijon mustard and extra virgin olive oil, combined with some fresh basil leaves.
Citrus - I'm using oranges for this citrus salad but you can use your favorite citrus fruits. Mix and match oranges, mandarins, blood oranges or grapefruit.
Beetroot - Earthy, rich and sweet, fresh beets are your secret ingredient for this salad. Have you ever tries mixing beet and orange together? Such joy!
Cucumber - Thinly slice English cucumber, which is refreshing and subtly sweet. A must for this salad.
Radish - Radishes are spicy, crisp and zesty, the perfect ingredient for our citrus salad recipe right here. There are many types of radishes you could use for this salad. I just happened to have French breakfast radishes, so I went with them.
Arugula - Every salad needs its greens which is why I love adding arugula to the combo. Arugula (or rocket salad) is slightly peppery which works fantastic with the sweet and juicy orange.
Fresh herbs - Add the fresh herbs of your choice: fresh mint leaves, dill and fresh thyme all work so well with this salad. Mix them all or pick your favourite.
Top your citrus salad with some bright tangy vinaigrette made with fresh lemon juice.
Extra toppings: Want even more? Add roasted chickpeas or creamy avocado for extra protein if you're hungry.

Description
A delicious summer citrus salad with peppery arugula and fresh beetroot, topped with fresh herbs and a tangy vinaigrette made with fresh lemon juice. The perfect refreshing lunch.
Ingredients
Citrus Salad
- 2 large oranges, peeled and sliced
- 1 medium beetroot, peeled and sliced
- 3 wt. oz arugula
- 1/4 cup cucumber, thinly sliced
- 1/2 cup radish, sliced
- 1/4 cup fresh herbs, chopped
Dressing
- 2 tbsp maple syrup
- 1 tbsp mustard
- 3/4 cups olive oil
- 1/4 cup lemon juice
- 1 clove garlic
- 5 leaves basil
- 1/2 tsp salt
Instructions
- In a mortar, add the garlic, basil and sea salt and 1 tbsp of olive oil and with the pestle, work the ingredients until they become a smooth paste.
- In a small bowl, add the maple syrup, mustard, lemon juice and the rest of the oil. Add the basil paste and mix well until the dressing is well combined. Set aside.
- In a large bowl or plates, layer the citrus slices, the beet, the arugula, cucumber, and radish.
- Add the vinaigrette and top up with fresh herbs and micro greens.
- Serve immediately and enjoy!
