Millet Snack Balls
Crispy millet snack balls which are super easy to make and so delicious to eat
Vegan millet snack balls are crispy on the outside, and delicious on the inside, packed with aromatic spices like paprika, turmeric and harissa seasoning. Super healthy, these millet balls are air-fried with no oil.
Ever since my husband bought me an air fryer I make almost all my recipes in it. I also love experimenting with it to see how crispy everything gets. So far, I'm impressed. Besides, you know how much I love millet because I already made a similar millet patty in the past, but it was fried in oil. This time, I took my recipe, altered it a little and made it in the air fryer so the outside is crispier and perfect for a millet snack ball. The result? Incredible.
My husband ate them in pitta bread with some vegan mayo and salad. I like to dip them into a spicy sauce and eat them with salad on the side. The options are limitless. They are the perfect festive appetiser or just as a quick snack for movie night. You can't go wrong with them, that's for sure.
Ingredients for millet snack balls
Millet - To make millet balls you're going to need some millet. It's such a cheap and convenient ingredient, I love it. Millet is a grain that provides you with plenty of phosphorus and magnesium.
Broth - I like to make my own broth by mixing a couple of vegetable stock cubes with boiling water. It's nice and easy. If you have pre-made broth, you can also use that for this recipe. The idea is that you need around 2 cups of liquid for every cup of millet.
Paprika - I use paprika in almost all my recipes. I use either Grade I Hungarian paprika or smoked paprika from Spain. This recipe can take either.
Barberries - I discovered barberries in a Turkish shop close to my home. I first added them to some Romanian dishes and I loved the result. Now I'm experimenting with adding barberries to a variety of dishes and their sweet-sour taste really gives an extra layer of flavour to my patties. If you can source them from an international shop, I do recommend them for this recipe!
Turmeric - Millet is yellow by default but the turmeric will add even more of a yellow glow to your millet snack balls. Besides, turmeric tastes so good and it's a natural antiinflammatory. Harissa Seasoning - Harissa powder is a ground spice blend of spicy, earthy and smoky. It just enhances the taste of your millet, and in combination with the turmeric, it just works like a charm. Harissa is peppery, smoky and can range in levels of heat. Some harissa seasoning has a strong garlic flavour too!
Coriander - Ground coriander is warm, spicy and nutty. It's the perfect ingredient to these millet balls patties and coriander truly complements the taste of the paprika and harissa. They are like a match made in heaven. It also has a hint of citrus which makes the profile of the recipe complete!
Flour - I use all-purpose flour which is needed to bind the mixture so you can easily create millet snack balls. Sometimes the mixture can still be sticky, so I recommend that you add some flour to your hands before handling the millet mixture. I've only ever tried this recipe with all-purpose flour. I'm not sure if it will work with gluten-free flours or alternative flours like chickpea, almond, coconut etc.
Flaxseed - To help bind the millet mixture we normally add eggs. But we've all vegan and health-conscious here so we're replacing the eggs with flaxseed mixture. Simply add 1 tbsp of flaxseed with 3 tbsp of water, mix it and let it sit for about 3-5 minutes until it becomes a bit gooey. That's your egg replacement.
Salt and Pepper to taste - Pepper is needed for turmeric, salt is needed because salt makes everything taste better. Add salt and pepper to taste but no more than 1/2 tsp of salt for these patties. You don't want them to be too salty after all. Allow the spices to thrive and create their magic for your taste buds.
How to serve the air fried vegan millet snack balls
Once you've air-fried these babies, you want to eat them. They are crispy, delicious and oh so good for you. My husband likes them in pitta bread with salad and some vegan mayo.
I, on the other hand, like them with a spicy sauce and a salad on the side. Some of my friends tried them last weekend during a small dinner party and they liked them on their own with some dipping sauce, as party appetisers. As you can see they are super versatile and can be eaten in so many ways. Whichever you decide to try, we know you are going to love these millet snack balls because they are:

Description
Our Millet Snack Balls are super crispy on the outside with a delicious interior full of flavours. It's an easy recipe, very healthy, made in an air-fryer. It has no added oil and it's suitable for vegans!
Ingredients
- 1 cup millet
- 2 cups broth
- 1 tbsp paprika
- 1 tsp turmeric
- 1 tsp harissa seasoning
- 1 tbsp ground coriander
- 1 tbsp dried barberries (found mine in a Turkish shop) (optional)
- 3 tbsp all purpose flour*
- 1 tbsp, ground flaxseed
Instructions
- In a large saucepan, prepare the vegetable broth according to the pack instructions. I used 2 veg cubes with 2 cups of water.
- Add the millet to the broth, bring to a boil and simmer for 10 minutes.
- After 10 minutes, remove the millet from the hob and let it stand with the cover still on for another 10 minutes.
- In the meantime, combine 1 tablespoon of ground flaxseed with 3 tablespoons of water. With a fork whisk them well. Set aside.
- Once the millet has absorbed all the water, add the flour and the flaxseed mix, the paprika, turmeric, harissa seasoning, coriander, barberries, and salt and pepper to taste. Mix well and set aside until the mixture has cooled down entirely.
- Get around 1-2 tbsp of millet mixture into your hands and shape it to create a ball (see notes). Place the balls into the air fryer. You might have to work in batches depending on the size of your air fryer.
- Air Fry the millet balls at 205C / 401F for 10 minutes. Serve with a dip and salat of your choice and enjoy.
Notes
*3 tbsp of flour should be enough but if the mixture feels too sticky, add a little flour into your hands before handling the millet mixture to shape it into balls. This will make it easier to handle and be able to shape it properly without difficulties.
