Easy Glazed Carrots

These glazed carrots are tender young carrots baked in a sweet glaze and served with fresh sea salt and freshly ground peppercorn. They are an easy side dish that tastes fantastic, perfect for any mains.
Now that I discovered how to properly bake glazed carrots, I love making carrots all the time. Not only they are quick and easy to make, but they are so healthy and delicious and my plate has more veggies on it. The first time I tried glazed carrots was in a restaurant in Helsinki where the chef made a special dish just for us.
I've been trying to make sweet and delicious, tender yet still with a good texture glazed carrots. Who knew this is so simple? You just need young carrots, sugar and olive oil. That's literally it! This is my go-to side dish that now everyone loves so much. You'll love it too. Try it and you'll never make carrots any other way!
Ingredients for Glazed Carrots
So what ingredients do you need for glazed carrots? Simple ingredients create the best ever glazed carrots.
Start by picking young, long carrots from your local shop. They are the ones with the green leaves still attached to them. Pro-tip: keep the green leaves as you can make some amazing carrot leaves pesto later. I used to throw away the carrot leaves, but not anymore. They are incredible, tasty and full of nutrients.
Brown sugar is the second ingredient. The sugar will be melted and all nice, thus giving you those perfectly glazed carrots. You can replace brown sugar with caster sugar or agave syrup. It will work just as well as I've had days when I baked my carrots with these alternative ingredients. I just prefer brown sugar because of the thicker consistency of the glaze.
You'll also need olive oil. I recommend extra virgin olive oil. Buy the best you can afford. Of course, you can replace it with normal olive oil or any other type of oil but in my opinion, olive oil with brown sugar really work best to create amazing glazed carrots. If possible, try to stick with these ingredients.
Finally, you'll need some sea salt and peppercorn. I use an electric mill to always have freshly ground salt and peppercorn. Sometimes, I like to add a little more sea salt on top of my glazed carrots once they are fully baked.
How to make Glazed Carrots
First, let's preheat the oven to 400F/200C. Prepare a baking sheet by lining it with baking paper.
Remove the carrot leaves and set them aside for another recipe and previously mentioned. They are packed with health benefits so no need to throw perfectly edible good food.
Peel and wash your carrots, then pat them dry with a kitchen towel. You can now add them to the ready baking sheet. Make sure to place them there in a single layer so don't overlap them or they won't bake uniformly. You want tender and perfectly baked glazed carrots.
In a small bowl mix the olive oil with the sugar. Mix with a tsp well until the sugar looks like it's beginning to dissolve. It will take a good 2 minutes of mixing so don't give up.
Now pour the glaze over the carrots and using a kitchen brush make sure they are fully covered on all sides. Now add the sea salt and peppercorn and bake in the centre of the oven for 30 minutes or until tender.
To check if your glazed carrots are ready, insert a fork in the middle of them. If the fork goes through nicely, they are ready!
Serve them as a side dish or on their own. Add more sea salt crystals if you like. Enjoy!

Ingredients
- 10 whole young carrots
- 3 tbsp brown sugar
- 3 tbsp olive oil
- 1/4 tsp sea salt
- 1/4 tsp freshly ground peppercorn
Instructions
- Preheat the oven to 400F/200C.
- Line a baking sheet with baking paper.
- Remove the carrot leaves and set them aside for another recipe. Peel and wash your carrots. Pat them dry with a kitchen towel.
- Place the carrots on the baking sheet in one single layer.
- In a small bowl, mix the sugar and the oil and mix well with a small teaspoon until the sugar feels more dissolved. This is your glaze.
- Pour the glaze over the carrots and using a kitchen brush make sure they are fully covered in glaze on all sides.
- Add the salt and pepper and bake in the centre of the oven for 30 minutes or until tender. You can try to poke them with a fork. If the fork goes through with ease, the glazed carrots are fully baked.
- Serve immediately as a side dish. You can sprinkle with some sea salt if you like them more flavoursome. The glazed carrots will taste sweet and delicious and will be perfectly tender.
