Easy Vegan Cheese Sauce
A quick and easy way to make vegan cheese sauce for when you fancy an amazing and versatile cheesy tasting sauce
So you are a beginning vegan and still fancy cheese? I know the feeling, cheese has been one of the most difficult things to let go of. But once you realise there are amazing alternatives you can do with real and vegan ingredients, you will never look back.
Once I discovered how to make this super easy vegan cheese sauce, I simply forgot about the need for the real thing. This cheese sauce really tastes like the real thing and it's creamy and delicious. One taste and you will be addicted, mark my words.
What is vegan cheese sauce?
Our vegan cheese sauce is a combination of potato, carrots, olive oil and nutritional yeast with a little water, lemon juice and garlic. We use the potatoes to make the cheese stretchy thanks to the starch content. We use the carrots to enhance the colour of the cheese and make it that beautiful vibrant yellow. Nutritional yeast is what makes the ingredients taste real cheesy. It's delicious, honestly. Lemon, mustard and garlic simply enhance the taste. The oil and water add to the texture.
All these simple ingredients create the most amazing cheese sauce ever. You can use it as a dip for things like tofu nuggets or you can use it as a sauce for when you fancy vegan steak, vegan sausages or vegan chicken.
You can also have it as is it with nachos or tortilla.
How to make vegan cheese sauce?
If you blink you will miss the recipe, seriously! It's that quick and easy. Boil the peeled and chopped potatoes and carrots. Drain and add to a blender. Add the water, nutritional yeast, oil, mustard, salt, lemon juice and garlic. Whizz until you get a lovely smooth sauce. Transfer to a bowl and dig in.
Tup, that's all there is! Quick, easy and super tasty!
How to store
I usually make a loooot of cheese sauce in advance so I like to store it in an airtight container for up to 5 days. But it's so delicious I usually eat it much faster than that.
Since it's quick and easy to make I don't recommend freezing it. It's best to have it fresh to enjoy that stretchy, cheesy texture. Yum!

Description

Ingredients
- 10 small potato, peeled and cubed
- 2 medium carrot, peeled and sliced
- 1/4 cup olive oil
- 1 cup nutritional yeast
- 1/2 cup water
- 3 cloves garlic, peeled
- 1 tsp salt
- 1 tbsp lemon juice
- 1 tbsp mustard
Instructions
- Boil the potatoes and carrots for 15-20 minutes until tender. Drain and transfer to a blender.
- Add the rest of the ingredients to the blender and whizz until everything is super smooth. Serve as a sauce or as a dip.
