Summer Vegan Strawberry Tart
How to make an easy vegan strawberry tart: this is a no bake vegan strawberry tart made with frozen berries and oat milk
With summer just around the corner, it's easy to see why I really wanted to make a vegan strawberry tart. It's easy, delicious and super refreshing. The first bite is so, so good. You will meet the crunchy and sweet oreo base, followed the perfect strawberry filling. Slightly tart, with sweet berry flavours, this is the winning no bake vegan tart.
It takes just a few ingredients and it's actually really easy to make. Let's dive in and make a vegan strawberry tart for the summer garden parties.
What you need for a vegan strawberry tart
To make a quick and easy vegan strawberry tart you will need a small tart form. I bought mine as a set and used the smallest one for this recipe. However, if you prefer a thinner base, you can also use a large tart form.
Next, you will need the secret ingredient that helps set the vegan strawberry tart: agar agar. Agar agar is a seaweed extract, fully vegan which acts just like gelatine. We use it all the time in our cooking and we love it. For example, not long ago we made these delicious vegan blueberry tarts. Also made with agar agar.
For the vegan strawberry tart base you can use oreo and vegan butter. You can also replace oreo biscuits with normal vegan biscuits if you prefer. Just make sure you adjust the vegan butter ratio to ensure you get a relatively sticky result which can be set in the tart form. The idea is to make sure you don't get dry crumbs or your base might not set properly.
For the actual strawberry mixture, I used frozen strawberries (thawed), oat milk, a little sugar, vegan whipping cream and agar agar. That's it.
I love adding whipped cream to my summer vegan tart because the consistency becomes a little less intense and more towards that of a mousse. However, this tart is properly set and it's by no means a mousse or has a mousse-like consistency. We need a different recipe for a summer mousse (coming soon, don't worry).
How to make vegan strawberry tart
Frist, we need to make the base. In a food processor blitz the oreos until they become fine crumbs. Add the melted vegan butter and mix again until you get a sticky sort of consistency. You can add a little more butter if your mixture is too crumbly. Make sure you add one tbsp at a time to ensure you don't make the crust too oily.
Press the mixture onto the bottom and sides of a tart pan. I used a 16 cm small tart form. Place in the fridge for about 10 minutes.
Mix the strawberries, oat milk and sugar in a blender. Whiz until everything is a smooth liquid. Set aside.
Whip the vegan whipping cream with a handheld mixer until you get beautiful peaks. Set aside.
Transfer the strawberry mixture to a saucepan. Add the agar agar and bring to a gentle boil while whisking continuously. Simmer for 1-2 minutes while whisking still, until you can see the mixture thickening a little. Remove from the heat and add the whipping cream to the strawberry mixture. Try and fold it nicely until it is fully incorporated.
The trick is that your cream will slowly melt away into the mixture. That's totally ok. Again, we are not trying to make a mousse, so don't worry. This is normal and the result will be delicious.
Take the vegan strawberry tart base out of the fridge and fill with the strawberry mixture. Try and make sure the surface is as smooth as possible. Transfer back to the fridge for at least 4 hours or overnight.
That's it. You can now enjoy this delicious vegan strawberry tart. Keep refrigerated and eat within 3-5 days. It's highly addictive so very likely you will finish it within a couple of days.
Feel free to decorate as you like. I frozen forest berries and slices of nectarine.
